How does a bimetallic strip work in a thermostat?

Two bonded metals have different expansion coefficients. On heating the higher-expansion side needs a greater length, so the strip bends with that metal on the outside of the curve. The bending can open a contact; cooling reverses it. This converts temperature change into mechanical switching.
